What Is Raw Honey?

Have you ever seen that gold, sticky liquid that appears in the beehive before the beekeepers take it out? You know, that unfiltered, viscous liquid with that distinct, sweet smell? That right there is raw honey, the kind that the bees quite literally still step in.

Raw honey contains lots of impurities. These include beeswax, pollen, and bits of dead bees. We should stress that, despite how it may look to us, this raw honey is still good to eat, bee parts and all. None of it is really toxic or dangerous for the human body. However, beekeepers still strain it to remove the impurities. Once they do, that raw honey is good to eat.

But in order to get regular honey, this raw ingredient has to go through a few other processes. The most important ones include pasteurization and filtration.

When a beekeeper pasteurizes honey, they do so to remove traces of yeast. This process includes intense heat which kills yeast cells effectively. Once yeast is removed, honey has a long shelf life and looks (and tastes) smoother than the raw stuff. But it doesn’t end at pasteurizing. Filtration removes other impurities such as air bubbles and minor debris.
